Rice Prep

• Rinse and drain jasmine rice. To a medium saucepan, add the water and bring to the boil. • Add rice, cover with a lid and reduce heat to low.
• Cook for 10 mins, then remove pan from heat and keep covered until rice is tender and water is absorbed, 10 mins.
TIP: The rice will finish cooking in its own steam so don't peek!
Veggie Prep

• Meanwhile, thinly slice carrot into rounds. Finely chop or crush garlic. Cut chicken breast into 2cm chunks.
• Heat a large frying pan with a drizzle of olive oil over medium-high heat.
• Cook carrot, until tender, 4-5 mins. Transfer to a bowl.
Cooking Time!

• Return frying pan to high heat with a drizzle of olive oil.
• Cook chicken, tossing, until browned and cooked through, 5-6 mins.
• Reduce heat to medium, then add jerk seasoning and garlic, and cook, tossing until fragrant, 1 min.
• Stir in coconut milk, baby spinach, a splash of water and cooked carrot and cook until well combined, 1-2 mins. Season to taste.
Assemble and Serve!

• Divide rice between bowls. Top with Jamaican coconut chicken curry.
• Sprinkle with a pinch of chilli flakes (if using) to serve.
