This easy Thukpa recipe is a Nepali-style noodle soup made with a fragrant garlic-ginger-tomato broth, pan-fried chicken breast, and warming spices like turmeric and cumin. Instructions

  1. Boil your noodles as per instructions & set aside
  2. Heat your pot w/ oil
  3. Add ginger & garlic and sauté until fragrant
  4. Add your red onions
  5. Sauté until soft
  6. Add tomatoes, carrots and green chilli
  7. Sauté
  8. Add water
  9. Add all the spices + salt, pepper, soy sauce & chicken bouillon
  10. Let it boil & set aside
  11. Pan-fry your chicken
  12. Then assemble your noodles
  13. Add your noodles in a bowl, soup, then top it off with the chicken and coriander leaves
  14. Ready to serve!
