Meal Prep Episode 1: Creamy Rigatoni & Kani Salad

Recipe

INGREDIENTS:

  • Creamy Tomato Rigatoni Pasta

  • Rigatoni Pasta

  • Tomato Paste or Tomato Sauce

  • Italian Herbs

  • Salt

  • Pepper

  • Cream (light or heavy)

  • Minced Onions

  • Minced Garlic

  • Pasta Water

  • Flour

  • Butter

  • Chili Flakes (optional)

  • Kani Salad

  • Faux Crab Meat

  • Cucumber

  • Mangoes (optional - i don't have it that's why it's not on the video)

  • Kewpie Mayo

  • Sriracha

  • Soy sauce

  • Rice wine vinegar

HOW TO COOK CREAMY TOMATO RIGATONI:

1. Boil your Pasta until al dente

2. Get some of the pasta water & drain

3. In a pan, put some oil

4. Put aromatics (onions & garlic)

5. Sautee until fragrant

6. Add in your spices (Salt, Pepper, Chili flakes, Italian Herbs)

7. Sautee until mixed properly

8. Add the flour & mix

9. Add in your cream

10. Add your Tomato sauce / paste & mix until combined

11. Add your pasta water and simmer for a few minutes,

12. Add your pasta & you're done!

13. Garnish with cheese and parsley!

HOW TO MAKE KANI SALAD:

1. Microwave the kani for 1 minute

2. Shred or cut the Kani into small pieces then set aside

3. Dice your mango and cucumber into small pieces

4. Add the Kani, mango, & cucumber in a container

5. Add the sauce ingredients (Kewpie Mayo, Sriracha, dash of soy, rice wine vinegar)

6. Mix until combined

7. Garnish with black and white sesame seeds
