Meal Prep Episode 2: Kimbap, Bibimbap, Tteokbokki

Recipe

(Disclaimer: I didn't have the right rice for this one, so if you're gonna try to make the recipe please use short or medium-grain white rice for kimbap like Japanese rice! ☺️)

INGREDIENTS:

KIMBAP (leftovers edition)

  • Japanese Rice (I used a different rice in the video because I didn't have it, but please use Japanese Rice when making your Kimbap!)

  • Sliced Sweet potatoes (I didn't have carrots so I'm using some leftover grilled sweet potatoes)

  • Broccoli (Not typically used in a Kimbap, but I'm just using it for the sake of not wasting it, you may use spinach instead!)

  • Shitake mushrooms (Feel free to use any mushrooms you like)

  • Beef bulgogi (you may use any protein you want, you can also make this vegetarian by adding honey teriyaki fried tofu)

  • Danmuji

  • Eggs

  • Nori

  • Sesame Oil

  • Salt

  • Pepper

HOW TO MAKE KIMBAP:

1. Cook your rice

2. Cook your eggs, make it a one-flat egg omelette so it's easier to cut into long thin strips

3. Blanch your spinach

4. Cut your shitake mushrooms, meat, carrots/sweet potato, Danmuji, spinach/broccoli into long thin strips

5. Stir fry carrots/sweet potato with sesame oil, salt & pepper then set aside

6. Stir fry broccoli with sesame oil, salt & pepper then set aside, If you're using spinach, no need to stir fry it, just add salt, sesame oil, and pepper & mix then set aside

7. Stir fry your mushrooms with teriyaki sauce

8. Cook your meat as you like

9. While waiting for your meat, your rice should be all cooked. Let's season it with sesame oil, salt, and pepper then set aside

10. After everything is cut and cooked, let's assemble our kimbap

11. I've got a bamboo roller to help me roll but if you're an expert in rolling kimbap then you don't need to use it hehe

12. Assemble with all the ingredients as you like then roll with the bamboo roller

13. Make another 1 and then drizzle some sesame oil on the outside of your rolled kimbap

14. Cut into 1-inch thick rolls and you're done!

15. We'll have more of the ingredients that we'll use for bibimbap.

BIBIMBAP INGREDIENTS:

  • All ingredients above, same with Kimbap

HOW TO MAKE BIBIMBAP:

1. In a bowl or meal prep box, add rice, veggies, and meat, like a color wheel on your rice to make it look good

2. Prep your sauce, combine gochugaru, gochujang, soy sauce, sugar, and a bit of water, mix everything and this will be your bibimbap sauce

3. Add the sauce to your bibimbap when ready to eat the mix until everything is properly combined

4. and you're done!

TTEOKBOKKI INGREDIENTS:

  • Rice cakes (can be bought at your local Korean store)

  • Fish cakes (can be bought at your local Korean store)

  • Gochuchang (can be bought at your local Korean store)

  • Gochugaru (can be bought at your local Korean store)

  • Soy sauce

  • Sugar

  • Salt

  • Pepper

  • Anchovy broth powder &/OR Anchovy soup bag (can be bought at your local Korean store)

HOW TO MAKE TTEOKBOKKI:

1. Soak your tteok in water while we're cutting some ingredients

2. Cut some white onions

3. Cut your green onions into 2-inch pieces, cabbage into 1-inch pieces, sausages into small pieces, and fish cakes into 1-inch squares

4. Mix your sauce, combine gochugaru, gochujang, soy sauce, sugar, and a bit of water,

5. In a small pot, add water & bring to a boil

6. Add your anchovy broth powder and anchovy broth bag

7. Bring to a boil and add all of your ingredients

8. Mix everything

9. Make sure the sauce mixture has dissolved properly

10. Bring to a boil and you're done!
