Recipe

ARROZCALDO INGREDIENTS:

  • Chicken (shredded or cut-up chicken)

  • Chicken Stock (homemade or store-bought)

  • Salt

  • Pepper

  • Chicken Cube

  • Rice (Any will do, but the ideal is Japanese rice)

  • Green onions (for garnishing)

  • Eggs (for boiling)

  • Water

  • Fish Sauce

  • Ginger

  • Onion

  • Garlic

HOW TO MAKE ARROZCALDO:

0. You can already steam the siomai while we do the arrozcaldo - Steam for 20 minutes

1. Let's prep the aromatics

2. Julienne some ginger, dice onions and garlic

3. Heat the pot with oil

4. Add in the aromatics (ginger, onion, garlic)

5. Sautee until fragrant

6. Add the pepper and chicken cube

7. Sautee for 2 mins

8. Add the rice and fish sauce, sautee for 2-3 minutes

9. Add the chicken stock & water

10. Bring to a boil

11. While boiling, you can add the eggs to the arrozcaldo as well

12. Boil and mix until you get a thick and starchy texture and until the rice is cooked

13. Siomai should all be done after cooking the arrozcaldo

14. All done and all ready to pack!
