Recipe

FILIPINO CHICKEN CURRY INGREDIENTS:

  • Capsicums (cut into 1 inch)

  • Carrots (chunked)

  • Potato (chunked)

  • Minced Garlic

  • Minced Onions

  • Minced Ginger

  • Chicken (Chopped into chunks)

  • Coconut Cream

  • Water

  • Salt

  • Pepper

  • Fish Sauce

HOW TO COOK FILIPINO CHICKEN CURRY:

1. In a hot pot with oil, add your carrots & potatoes

2. Remove from pan until colour changes

3. Add the aromatics (Ginger, Onion, Garlic)

4. Sautee until fragrant

5. Add the chicken pieces & cook until a bit cooked

6. Add the fish sauce & stir for 2-3 minutes

7. Add the coconut milk & water

8. Let it boil

9. Add the curry powder (add as you like, not too much!!!)

10. Mix & simmer until reduced

11. Cover until potatoes and carrots are cooked

12. Boil until you break the sauce of the curry (when the oil and liquid separated)

13. & we're done!

VEGGIE OKOY INGREDIENTS:

  • Julienned Carrots

  • Shredded Cabbage

  • Shredded Pumpkin (optional)

  • Salt

  • Pepper

  • Cornstarch

  • All-purpose flour

  • Water

  • Oil for frying

  • Turmeric Powder (Optional)

HOW TO COOK VEGGIE OKOY:

1. Combine your carrots, cabbage, pumpkin, flour, cornstarch, water, turmeric powder (optional)

2. Add your seasonings (Salt & pepper)

3. Mix until everything is combined

4. Fry until crispy & golden

CHICKEN TANGSUYUK INGREDIENTS:

  • Carrots

  • Onions

  • Capsicum

  • Chicken Strips

  • Water

  • Potato Starch

  • Salt

  • Pepper

  • Ginger Paste

HOW TO COOK CHICKEN TANGSUYUK:

1. In a rectangular container, add the 1 inch of potato starch & add water until watery consistency, let it sit for 30 minutes

2. Add your chicken strips to a big bowl and marinate with salt, pepper & ginger paste for 30 minutes

3. After 30 minutes, you'll see that the water & potato starch have separated, drain the water out until you're left with a sticky consistency of the potato starch

4. Add the marinated chicken strips to the potato starch mixture

5. Deep Fry in your hot oil

6. Set your fried chicken strips aside while we make the sauce

7. In a pan with hot oil, add all the veggies & stir fry for 2-3 minutes

8. Add water, sugar and white vinegar

9. Let it simmer for 5 minutes

10. Add slurry to thicken the sauce

11. Boil until carrots are cooked

12. Add the chicken pieces

13. Mix & we're done!
