Description

Move over, regular mashed potatoes! This authentic Nepali Mashed Potatoes recipe (Aloo Bharta) is packed with bold flavours, spicy chillies, and a secret touch of mustard oil that takes side dishes to the next level. Whether you need a quick weeknight side or want to spice up your dinner routine, this easy, comforting potato recipe is a must-try.

Ingredients

Instructions

  1. Boil the potatoes

Place your 3 peeled large potatoes in a pot of salted water. Bring to a boil and cook until they are completely fork-tender. Drain the water and let them cool just enough so you can handle them.

  2. Combine Everything in a Bowl

Put your potatoes and spices in a bowl
  3. Bloom the spices (The Temper)

Heat 1 tbsp of mustard oil in a small pan or skillet over medium-high heat until it starts to gently smoke (this mellows the intense rawness of the oil). Then add into your bowl with spices.

  4. Mash and serve

Use a sturdy spoon/fork to mix everything together thoroughly until the potatoes turn a beautiful golden-yellow colour and the hot oil slightly softens the onions.

Nepali mashed potatoes are not fine strained mashed potatoes FYI
