Boil the potatoes
Place your 3 peeled large potatoes in a pot of salted water. Bring to a boil and cook until they are completely fork-tender. Drain the water and let them cool just enough so you can handle them.

Combine Everything in a Bowl
Put your potatoes and spices in a bowl -
Bloom the spices (The Temper)
Heat 1 tbsp of mustard oil in a small pan or skillet over medium-high heat until it starts to gently smoke (this mellows the intense rawness of the oil). Then add into your bowl with spices.

Mash and serve
Use a sturdy spoon/fork to mix everything together thoroughly until the potatoes turn a beautiful golden-yellow colour and the hot oil slightly softens the onions.

Note
- If you want to give it an extra authentic kick, I recommend adding a handful of chopped fresh coriander (cilantro) or a finely chopped green chilli at the very end for fresh colour and heat!
