Crispy Taiwanese‑style chicken bites made lighter in the air fryer. Marinated in soy, Shaoxing wine, garlic, and ginger, coated in potato starch, then finished with a fragrant salt‑pepper dry rub. This version keeps all the flavour and crunch with less oil. Perfect with hot rice, veggies, or as a snack‑style dish.

Instructions

  1. Debone and cut the chicken thigh into chunks.
  2. Place the chicken in a bowl and marinate with ginger paste, garlic paste, pepper, Shao Xing wine, and soy sauce for about 30 minutes.
  3. While the chicken marinates, prepare the flour mixture.
  4. Combine all the flour mixture ingredients in a separate bowl.
  5. Once the chicken is ready, coat each piece in the flour mixture.
  6. Lightly oil your air fryer basket and place the coated chicken inside.
  7. Air fry at 200°C for 12 minutes, flipping at the halfway point.
  8. While the chicken cooks, mix all the dry rub ingredients in a separate bowl.
  9. When the chicken is done, toss it with the dry rub mixture.
  10. Serve with hot rice and veggies.
