A creamy, aromatic Filipino‑style chicken curry made with coconut milk, tender chicken, potatoes, carrots, and capsicum. It’s mild, comforting, and naturally sweet from the vegetables. A true Filipino home‑cooked classic that pairs perfectly with steamed rice.

  1. In a hot pot with oil, fry the potatoes and carrots until they change colour, then set them aside.
  2. Add a bit more oil, then add the ginger, garlic, and onion.
  3. Sauté until the onions soften.
  4. Add the chicken pieces and flip once they change colour.
  5. Pour in the fish sauce and sauté briefly.
  6. Add the coconut cream, followed by the water.
  7. Let it simmer for a few minutes.
  8. Return the potatoes to the pot.
  9. Add the curry powder and turmeric for colour and flavour.
  10. Mix well and let it cook on low heat until the chicken is tender and the sauce begins to separate from the oil.
  11. Add the capsicum and let it cook briefly until slightly softened.
  12. Serve hot with steamed rice.
