A bold, aromatic Nepali stir‑fried chicken dish cooked in fragrant mustard oil with whole spices, ginger, garlic, and earthy masalas. It’s savoury, slightly smoky, and deeply flavourful. The kind of quick stovetop chicken that tastes like it took hours. Perfect with steamed rice, roti, or as a protein-packed side.

  1. In a hot pan, add the mustard oil
  2. Once hot enough add fenugreek seeds
  3. followed by cinnamon stick, bay leaves, and cloves until fragrant
  4. add your diced chicken
  5. add salt
  6. let it cook until most of liquid from the chicken has evaporated
  7. Once almost all liquid is gone, add your minced ginger & garlic
  8. Add red onions
  9. Add in your spices (turmeric, coriander, cumin, chili powder & meat masala)
  10. Sautee
  11. Let it fry for a few more minutes and it's done!
  12. Serve with your favourite sides and steamed rice
